1lb lean ground beef
1 onion chopped
2 C salsa
1 can black beans
1 can corn, drained
2 Tbsp taco seasoning mix
1C sour cream
1 pkg mexican shredded cheese
shredded lettuce
1 tomato diced
Brown the meat and onions. In a large mixing bowl, combine salsa, black beans, corn, taco seasoning, sour cream. In a casserole dish layer the meat, and top with bean mixture. Top that with the cheese.Cover with foil and bake at 400* for 30 minutestake the foil off and broil until the cheese is bubbly
It works best to serve after letting this sit and firm up for about 5 minutes. Top with lettuce, tomatoes, and maybe a little extra cheese or cilantro if you like it.
You can also freeze this at the point where you'd bake it. To bake right out of the freezer:Bake at 400* for 1 hour covered and another 15-20 minutes uncovered
